Gluten-Free Key Lime Pie

1 box of crushed Enviro Kids Animal Crackers

Melted butter (enough to moisten crackers)

3 Tbsp. of sugar

1, 14oz. can of sweetened condensed milk

3 egg yolks (whites not used)

1/2 cup key lime juice

Crush animal crackers and place in a 9 inch pie plate. Mix in butter and sugar. Press into pie plate to form crust.

Combine milk, egg yolks, and lime juice. Blend until smooth. Pour filling into pie shell and bake at 350 degrees for 15 minutes.

Allow to stand 10 minutes before refrigerating. Just before serving, top with freshly whipped cream and garnish with lime slices.
